Steamed rice and red beans

Servings: 4

Ingredients:
1 onion, finely chopped
2 cloves garlic, crushed
1 tbsp (15 ml) vegetable oil
8 oz (227 g) mushrooms, sliced
1 green pepper, trimmed and diced
1 cup (250 ml) long grain rice
1 can (17 oz, 540 mL) kidney beans, drained and rinsed
1 can (28 oz, 796 mL) plum tomatoes
1 / 2 cup (125 ml) vegetable broth
1 tbsp (15 mL) chili powder
2 tsp (10 ml) cumin, ground
1 / 4 tsp (1 ml) cayenne pepper, ground
Salt
Pepper
1 cup (250 ml) mozzarella cheese, grated

Directions:
1. Preheat oven to 350 degrees F (180 ° C).
2. If a skillet, melt the onion and garlic in oil. Add mushrooms and green pepper.
3. Cook, stirring, until vegetables are tender.
4. Add rice, beans, tomatoes, vegetable broth and seasonings. Salt and pepper.
5. Cover and simmer about 25 minutes or until rice is tender and liquid is almost absorbed. Correct seasoning.
6. Pour in a baking dish and sprinkle with cheese.
7. Cook in oven at 350 degrees F (180 ° C) for 15 minutes.

This recipe comes from my mother, who constantly sends me her new recipes so I can try them myself. I chose this recipe because it is very easy, inexpensive and healthy, and since I live by myself, it comes in handy! With only 20 minutes of preparation time, I am more inclined in preparing this dish because as a working student, I don’t have much time to spend cooking. Another advantage of this dish is that the ingredients are very common, and so can be found at any local grocery store. Regarding health, as you can see it consists almost only of vegetables and legumes, so it obviously is healthy.
