Beans with Tomato (Fagioli al Pomodoro)


You will need the following ingredients to make "Fagioli al Pomodoro" :
- 2 - 300g cans cannellini beans
- 3 carrots
- 1 onion
- 3 sticks of celery
- 2 medium potatoes
- 1 chicken stock cube
- 200g can of peeled whole tomatoes
- salt and pepper
- 3 tablespoons of olive oil
- 1 extra tablespoon of olive oil
- 3 tablespoons of chopped parsley
- 1 1/2 cup water

1. Peel and finely chop onion; chop celery; peel and chop carrots; peel and dice potatoes.
2. Heat 3 tablespoons of oil in a large pan and add the chopped onion, celery, carrots and potatoes. Cook over medium heat for 15 minutes.
3. Stir in water, crumbled chicken stock cube, mashed tomatoes, salt and pepper. Bring to boil, reduce heat, cover and simmer for 1 hour. Add the rinsed cannellini beans the last 10 minutes of cooking with the chopped parsley and an extra tablespoon of olive oil.


This recipe, Fagioli al Pomodoro (Beans with Tomato), comes from the southern part of Italy. This recipe has been passed on from my grandparents to my parents. It is very easy to prepare, but it is very time consuming because you have to chop the vegetables. I shared the recipe with my parents and grandparents. I felt very comfortable sharing this dish because it is eaten by all Italians. It is a low cost meal, but very healthy because the beans contain protein and the vegetables contain vitamins which are required for a healthy balanced meal. It is healthy for the environment because it is not processed food. The ingredients to make this recipe are found in all grocery chains.
