Rice and Beans
Preparation: 5 minutes
Cooking Time: 75 minutes
Servings: 4
INGREDIENTS:
2 cups cooked Black beans (use rinsed can beans)
1 cup frozen whole kernel corn
1 cup long grain rice
½ cup of water
6 ounces thick salsa, mild or hot
1 ½ cup V8 vegetable juice or tomato juice
½ tea spoon of oregano
½ teaspoon of cumin
DIRECTIONS:
I. Combine all ingredients
II. Spray 2 quart casserole dish with cooking spray
III. Bake uncovered 1 ¼ hours at 375 or until rice is tender
IV. Can be served with sour cream, tortillas, cheese, or whatever you desire
--> Quick to throw together, healthy, tasty dish that can be either a side or a main dish. Limited only by your imagination.
